Mama Ileen’s Caribbean Cakes was established in the beautiful island of Antigua. Our rum cakes are enjoyed by many on the island and are highly known because of its distinctive flavor and moistness. The company’s goal is to meet our customers’ expectations by providing the best quality rum cake at all times on time. Many years ago the recipe was created by my mother Mama Ileen. As a part time endeavor she sold these cakes at the local market on weekends. Today Mama Ileen’s homemade recipe is still going strong as her cakes are now being baked in Florida by her daughter
